African Hot Sausage and Rice

Makes 6 Servings



1.      Cut sausage into 1 inch cubes

2.      Cook with oil in skillet over medium heat for 10 minutes or until the sausage browns

3.      Add water, salt, red pepper, curry powder and pepper

4.      Stir in un-drained kidney beans, bell peppers, onion and rice

5.      Cover and cook for 10-15 minutes, or until the rice is plump and liquid is gone

6.      Allow to sit covered for 7 minutes before serving

7.      Serve ladled over uncooked sliced tomatoes
