Longaniza Breakfast Burritos

Makes 4 Servings



1.      Remove casings and crumble the sausage

2.      In skillet add oil and sausage, cooking over medium heat stirring frequently until sausage is well browned

3.      Add onion and chile pepper, cooking until onion is translucent

4.      Stir in eggs, then reduce heat to medium-low, continuing to stir until eggs are cooked through

5.      Pour cooked mixture into oven-warm flour tortillas and top with cheese

6.      Serve alone or with hash browns
