Bacon and Tomato Gravy

Makes 16 Servings



1.      Cook the bacon in a skillet until evenly browned, over medium-high heat

2.      Place cooked bacon on a paper towel covered plate, leaving the drippings in the skillet

3.      Add butter and flour into skillet, stirring for 4 minutes or until the sauce thickens

4.      Hand crush the tomatoes into smaller bits and stir into the skillet

5.      Stir in cream cheese and heavy cream, reducing heat to medium-low

6.      Allow to simmer for 10 minutes

7.      Mince cooked bacon and add to the gravy before serving

8.      Serve over pasta, with rice or atop a breaded chicken breast
