Arnold’s Poached Eggs on Scrapple with Bacon
 

Makes 4 servings
Ingredients:
1 pound Arnold’s Beef Scrapple OR Arnold’s Pork Scrapple
1/2 pound Arnold’s Beef Bacon
4 large eggs
Chopped parsley

Directions:
1. Pan fry scrapple and bacon until crisp.
2. Drop each egg into a swirl of gently simmering water. Put aside with cover until set, or cook over low heat with yolk exposed above water line. Sprinkle with chopped parsley, and salt and pepper if desired.
3. Place eggs on scrapple and bacon.
Comments: Potatoes in cream work well as a side dish.
