Sausage and Peppers

Ingredients:
1 or 2 (16oz. package) Arnold's or Caroline Smoked Sausage
1 medium size onion
1 of every color of bell pepper (green, red, yellow, orange)
1 large tomato, cut into wedges

Directions:
Remove sausage from casing and brown in skillet. Drain and reserve. Sauté peppers and onions in butter over medium-high heat until soft. Turn heat to high and add tomatoes, chili powder, rice and sausage. Bring to a simmer (do not boil), cover and turn heat to warm. Let stand for 10-15 minutes. 10 servings.
