African Hot Sausage and Rice            
                Makes 6 Servings            
         
        
            
               
                
                
                
                    
                        
- 1 lb Caroline’s Smoked Hot Beef Sausage®
 
- 1 tbsp Vegetable Oil
 
- 1 ½ cups Water
 
- 2 tsp Salt
 
- ½ tsp crushed Red Pepper
 
- 1 tsp Curry Powder
 
- ½ tsp Pepper
 
- 1 (16 oz) can Red Kidney Beans
 
- 1 cup uncooked Rice
 
- 2 Green Bell Peppers, cut into 1 inch squares
 
- 1 Onion, chopped
 
- 2 Tomatoes, sliced
 
                   
                 
             
            
            
                 
                
                    
                        
- 1. Cut sausage into 1 inch cubes
 
- 2. Cook with oil in skillet over medium heat for 10 minutes or until the sausage browns
 
- 3. Add water, salt, red pepper, curry powder and pepper
 
- 4. Stir in un-drained kidney beans, bell peppers, onion and rice
 
- 5. Cover and cook for 10-15 minutes, or until the rice is plump and liquid is gone
 
- 6. Allow to sit covered for 7 minutes before serving
 
- 7. Serve ladled over uncooked sliced tomatoes
